Do Shells Really Matter?
For those that are
buy lobster, one of the clear
indications of a fresh lobster is how it looks. Of course you want
to be sure that the lobster is moving and that it does not have any
broken shells or claws on its body. These indicate that the lobster
is not alive or is very close to being dead. Purchasing fresh,
live lobster is well
worth the investment, though. You can buy lobster that is made of
various types of shells, though. The shell of the lobster is its
tool and protection. As the lobster grows, it will molt out of the
old shell and grow a new one. This is natural and what's more, it
may confuse those that are buying lobster about the condition and
age of the lobster.

Shells Are
Their Home
The shell of a lobster is its home and its protection, which is why
it is very important to look for a shell that is whole and in tact.
You will find that small holes in the shell are common and just show
that the lobster hasn't molted recently. But, you will also want to
consider more about the shell when purchasing it.
For example, if the lobster's shell is hard, this is an indication
that the lobster has been in his shell for a rather long time and
has not molted recently. Lobsters with this type of shell are
generally fully in terms of the meat within them. You will need
lobster tools to get inside that shell to actually remove the meat
because of how strong the shell is. On the other hand, you can
purchase a lobster that is in a new shell. The lobster shell will
not appear to be as full but that's because they haven't fully grown
into the shell just yet.
When you buy lobster, make sure the lobster is healthy. In terms of
the shell, some people believe that lobster that is in a new shell
is actually sweeter in taste than older lobsters with hard shells.
It is much easier to remove from the shell! But, in both cases, a
intact shell is the most important thing to look for. Choose
lobsters that are alive and healthy when you buy lobster. If you
have a preference for the taste of lobster, go for it. But, remember
that in either of these cases, the shell itself doesn't affect the
taste of the lobster.
